Avocado sandwich

Now that I'm baking again, the avocado sandwich is becoming a regular part of my diet. Avocados are nutritious and go well with fresh bread and tomato. My favorite toppings are alfalfa sprouts and feta cheese but didn't have either in the fridge today so made do with mung bean sprouts and drizzle of olive oil. The bread is 1/2 whole wheat flour and 1/2 European flour with 80 grams of raisons and 60 grams of chopped pecans mixed in. Made the bread this morning so it is still very fresh and moist - hum!
