Banana Bread

Had a hankering to bake this morning; especially since I'm swimming later and it is a good excuse to eat:) Generally followed a recipe for Heavenly Healthy Banana Bread but reduced the sugar, didn't have vanilla extract, and added a grated carrot. Breadhttp://www.kingarthurflour.com/recipes/heavenly-healthy-banana-bread-recipe

I'm going to experiment further with reducing or eliminating sugar; don't think it is necessary. I use truvia baking blend which is a stevia leaf extract and claims to have 75% fewer calories per serving than sugar and says 1/2c sweetens like 1c sugar so I basically half the amount of sugar called for in a recipe; however, I'd prefer not to eliminate it all together.

I've used OJ, pineapple, and other food as sugar substitutes when baking but these substitutes also have sugar. Also use honey and maple syrup but think they are basically the same as using sugar.

Decided to make min-loafs but forgot (until it was almost too late) to adjust baking time:) so they turned out a bit brown and dry:) Still great with a glass of milk:)
